Good Taste: Tommy’s Study in Salmon

A rich menu gets off to an artful start at Tommy’s Italian American Grill via this smoked salmon appetizer.

 

Now in its second incarnation, Tommy’s Italian American Grill is OKC’s evidence that sometimes restaurant lightning does strike twice. The original closed in 2005, but nearly a decade of hiatus and a new location later, the comfortably refined magic returned to satisfy palates anew.
 

The menu encompasses all kinds of savory tastes: the brick oven pizzas are excellent, especially the Prosciutto di Parma, and the seafood-laden Linguine con Frutti di Mare is a flavorful take on a classic. But to start appreciating the culinary artistry on display in this cozy space on Memorial Road, begin at the beginning.

While there’s nothing esoteric in terms of ingredients in Tommy’s Smoked Salmon Appetizer – thinly sliced fish arranged into roses, diced red onions, capers, dollops of cream cheese and toast rounds – the do-it-yourself starter is an object lesson in how much presentation can elevate diners’ enjoyment of a dish.
