A Recipe for Pie Junkie’s Oatmeal Chocolate Chip Pie

Once Pie Junkie decided to retire their Oatmeal Chocolate Chip pie, they also thought it would be fun to share the recipe so fans can continue to enjoy their favorite flavors at home.

Of course, you’ll need to bake it first, and we can’t guarantee you’ll do as well as the Pie Junkie team — we definitely can’t — but it will be fun and delicious to try.

Pie Junkie’s Oatmeal Chocolate Chip Pie

Pie Junkie 12/3 c. unsalted butter, softened
2/3 c. granulated sugar
2/3 c. light corn syrup
3 large eggs
1 tsp. vanilla extract
1 tsp. salt
2/3 c. quick oats
1 c. chopped walnuts
1/2 c. semisweet chocolate chips
9” pie crust, unbaked

Preheat your oven to 350 degrees and prepare your unbaked pie crust. Cream softened butter and sugar in a mixer until light and fluffy, scraping the bowl often. Mix in the eggs one at a time until they’re combined. Scrape the bowl, then drizzle in the corn syrup. Add vanilla and salt, mix and scrape the bowl. It’s normal for the mixture to look separated! Stir in the quick oats and give the bowl a final scrape.

Pour chopped walnuts into the prepared pie crust, then spread the filling evenly on top and sprinkle with semisweet chocolate chips. Bake in the lower half of your oven for about 45 minutes, rotating it halfway through. You’ll know it’s done when the top is set but still has a bit of a jiggle.

Let it cool on a rack, then refrigerate it until it’s completely set for easy slicing. This pie freezes well if you feel like making a second pie and freezing it for a pie-mergency!
